BBW Brownies

Homemade Pasta Noodles

Homemade Pasta Noodles

Brown Butter Walnut Brownies!

These delectable treats are extremely easy to make, as it all goes just in one saucepan, and are just as easy to devour. The balance of rich chocolate and slight saltiness sets up for the perfect bite. I personally added some walnuts on top as the nuttiness pairs just right to offset the richness, but it's completely up to you!

I have linked the recipe down below and please let me know if you try it. Enjoy!

Homemade Pasta Noodles

Homemade Pasta Noodles

I've been wanting to make pasta noodles from scratch for a while now and I finally did it! I didn't have a pasta roller machine at home, so I found a reliable recipe that could be hand rolled. These pasta noodles tasted amazing because they were so fresh. I paired it with a spicy pesto based sauced and sautéed broccoli, mushrooms, bell peppers, garlic, and onions together with spices of your choice! The only tip I would give you, if you end up making it at your own home without a machine, is to cut your noodles very thin (thinner than it shows in the video, as it does expand in the water). Also, once your noodles are cut, stretch them out with either your hands or a rolling pin. Pair these noodles with your favorite sauce and you can feed at least 6 people with this recipe.

Gol Gappe

Homemade Pasta Noodles

Cream Puffs

This is one of the most famous Indian street snacks! The base is a fried hollow fritter made with wheat and semolina flour that is then filled with a mixture of potatoes and black garbanzo beans. Then there are a couple variations, but the way my family does it is we put a little bit of tamarind chutney to add flavor. Finally, we add the minty and tangy spiced water that brings all of the flavors together in one small circular or "gol" package. I have linked the recipe that we used to make the actual fritters down below. Be sure to let me know how it goes if you end up trying this recipe.

Cream Puffs

Almond Flour Chocolate Chip Cookies

Cream Puffs

This was my first attempt at making cream puffs and it turned out pretty well! I had the original intention of making strawberry cream puffs, but when I added the strawberry puree to my whipped cream, it didn't set the way that I wanted it to. Because of this, I made regular cream puffs and was very excited about the outcome! The dough was by far one of the easiest doughs I've ever made, since it was only 4 ingredients in one saucepan. The puffs rose and became as light and airy as the ones that you buy directly from a bakery as well, so overall I was very pleased with how it turned out. If you try to recreate this using the strawberry puree, please do let me know if it works for you as I think I might have put too many strawberries. One last piece of advice I would give is to swap out the granulated sugar for powdered sugar in the whipped cream because granulated sugar can weigh the cream down a little and powdered sugar is the ideal way to sweeten up a whipped cream.

Almond Flour Chocolate Chip Cookies

Almond Flour Chocolate Chip Cookies

My sister and I decided one night to try and find a healthier take on chocolate chip cookies. We came across this recipe that had half of the sugar and butter than normal chocolate chip cookies as it used coconut oil and coconut sugar. It also took out the All Purpose Flour and replaced it with Almond Flour. These replacements not only added nutritional value to the cookies, but it also added a certain depth of flavor to spice up the cookie. We also added walnuts to add a bit of crunch in the batter. These cookies will be a hit for people of all ages!

Thai Shrimp Panang Curry

Almond Flour Chocolate Chip Cookies

Almond Flour Chocolate Chip Cookies

Panang Curry is one of my family's favorite Thai curries and it turned out quite perfectly when I followed the recipe. I decided to use shrimp instead of chicken as my family prefers seafood and also skipped out on the kefir lime leaves as I couldn't find them. Nevertheless, the curry still turned out exactly how it tastes in authentic Thai restaurants. Once you make this curry, serve over your choice of rice or noodles for a fantastic meal for 4 people. Please give this recipe a try and let me know how it turns out for you.

Whole Wheat Maple Banana Bread

Smoked Salmon Mini Frittata Muffins

Smoked Salmon Mini Frittata Muffins

Since banana bread seems to be the staple of baking during the quarantine, I decided that I wanted to hop on the trend. Instead of doing your traditional banana bread, I decided to look for a recipe that was a little bit healthier. I swapped regular all purpose flour for whole wheat and your traditional white sugar for all natural maple syrup. I of course then added in walnuts because my entire family loves the deeper flavor profile  that it provides, but you can add in whatever mix in you would like! I'd consider this recipe very easy and low mess, so definitely take a look at the recipe if you would like to create your own banana bread.

Smoked Salmon Mini Frittata Muffins

Smoked Salmon Mini Frittata Muffins

Smoked Salmon Mini Frittata Muffins

These protein packed frittata muffins are the best healthy on-the-go breakfast for a busy family like mine. All you need to recreate this are eggs, smoked salmon slices that are broken up, diced tomatoes and onions, and shredded mozzarella cheese. First, whisk the eggs completely and then load up all the other ingredients along with salt, pepper, and chili powder. Then, pour the mixture into a lightly oiled muffin tin and sprinkle a little more cheese on top to give it a little more love. Bake for 10 to 15 minutes at 350 degrees and after baking garnish them with a couple of dried dill leaves.

Let me know if you recreate these and how you like them!

Enjoy :)
